Uncomplicated and extremely satisfying in taste. From the start of preparation to sitting down at the table to eat, these delicious noodles and meat sauce can be thrown together in just 15 minutes and are full of flavour thanks to the umami-rich miso, soy and ginger sauce on crispy fried pork mince.
Noodles
Dried egg noodles provide a nice chewy bite that compliments the sauce. However feel free to mix things up by using gluten-free buckwheat noodles, fresh ramen noodles or big fat udon noodles. Almost any Asian noodles with pair perfectly with this sauce.
Garnish
Shredded spring onions are the standard topping for Asian stir-fries and sauces, but for a fresh zingy touch add finely sliced cucumber marinated in some oil and vinegar or simple lemon juice and salt. Dried crispy onions also make a great garnish as do black or white sesame seeds.

Ingredients
- 1 tbsp vegetable oil or rapeseeds oil for frying
- 1/2 medium leek, sliced thinly
- 1 garlic clove, crushed
- 1 Tbsp ginger, minced
- 250g pork mince
- 50ml hot chicken stock
- 1 Tbsp dark soy sauce
- 1 Tbsp light soy sauce
- 1 Tbsp mirin
- 1 Tbsp miso paste
- 1 tsp honey
- 200g egg noodles
- 2 spring onions, sliced thinly
Instructions
- Boil egg noodles according to packet instructions.
- Fry garlic, ginger and leek for a few minutes until soft. Add pork mince and cook until nicely browned and starting to crisp.
- Combine hot stock, miso, soy, honey and mirin. Pour over pork and cook until thickened slightly, approx 1 minute.
- Serve miso pork sauce over egg noodles, garnish with sliced spring onions.
