Miso Ginger Pork Noodles

Ingredients

  • 1 tbsp vegetable oil or rapeseeds oil for frying
  • 1/2 medium leek, sliced thinly
  • 1 garlic clove, crushed
  • 1 Tbsp ginger, minced
  • 250g pork mince
  • 50ml hot chicken stock
  • 1 Tbsp dark soy sauce
  • 1 Tbsp light soy sauce
  • 1 Tbsp mirin
  • 1 Tbsp miso paste
  • 1 tsp honey
  • 200g egg noodles
  • 2 spring onions, sliced thinly

Instructions

  1. Boil egg noodles according to packet instructions.
  2. Fry garlic, ginger and leek for a few minutes until soft. Add pork mince and cook until nicely browned and starting to crisp.
  3. Combine hot stock, miso, soy, honey and mirin. Pour over pork and cook until thickened slightly, approx 1 minute.
  4. Serve miso pork sauce over egg noodles, garnish with sliced spring onions.
