Making bacon jam is easy, you simply fry bacon, caramelise onions, add the remaining ingredients and slowly cook down. Bacon Jam with BBQ Sauce

This is more of an all-rounder jam, made with a base of ketchup and cooked down with sugar and vinegar and smoked paprika to produce a ‘BBQ’ sauce taste. The bacon lardons are chunkier and with a satisfying chew. This is the ultimate bacon jam for a cheeseburger, beef burger, chicken burger or served at a BBQ alongside grilled meat and vegetables.

Ingredients

Scale
  • 300g smoked bacon lardons
  • 2 large white onions, diced into small pieces
  • 6 cloves garlic, minced
  • 1 tsp dry thyme
  • 2 Tbsp smoked paprika
  • 1/4 raw cup sugar
  • ¼ cup apple cider vinegar
  • ½ tsp chilli powder (optional)
  • 180ml water
  • 180ml tomato ketchup
  • 1 tsp sea salt flakes
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Fry bacon lardons over medium heat until the bacon is crispy.
  2. Add onions and cook until very soft and start to caramelise. They should be nicely browned and a little sticky.
  3. Add the sugar, thyme and smoked paprika. Cook for a couple of minutes, trying to help sugar melt and caramelise. Next, add apple cider vinegar and cook until reduced with no obvious liquid.
  4. Finally, add water and ketchup and over a low heat cook down for 5 – 10 minutes or until it reaches a jam-like consistency. Checking and stirring every now and then to ensure it doesn’t burn or become dry.
  5. Stir through salt and pepper. When cool, transfer to a jar and refrigerate overnight before use. This will allow the flavours to meld and produce a wonderful flavour.

Substitutes: Sugar can be substituted with Maple Syrup.
