
This amazingly versatile and refreshing green feta sauce can be applied to nearly every meal
A combination of fresh coriander, mint, charred green pepper, lemon, cumin and fresh lemon juice, it’s delicious served alongside BBQed meat, vegetables, fish, poached eggs, roasted chicken, spread onto crusty bread, in a salad with tomatoes or used as a dip.
Make a batch to keep in the fridge and you’ll find yourself adding a scoop of it to almost everything you eat.
Tomatoes
Tomatoes and Charred Green Feta Sauce are a match made in heaven. Chop tomatoes into small pieces, squeeze over lemon or lime juice, sprinkle with sea salt and top with toasted pine nuts. Serve with crusty bread or as a side to meat and vegetables.

Refreshing green feta sauce made with coriander, mint, charred green pepper, lemon, cumin and fresh lemon juice. Delicious served alongside bbq meat and vegetables, fish, poached eggs, roasted chicken, spread onto crusty bread, in a salad with tomatoes or used as a dip.

Ingredients
- 1 green pepper
- 25gm coriander including stems
- 15g mint leaves
- 150g feta drained
- ½ tsp red wine vinegar
- ½ tsp sugar
- Juice ½ small lemon
- ½ tsp cumin powder
- ½ garlic clove
- ½ tsp salt
- 3 tbsp olive oil
Instructions
- Preheat oven to 200°C. Rub pepper in oil and roast for 40 minutes, or until charred and blackened on the outside.
- Place pepper in a bowl and cover for 10 minutes so juices are released. After this time drain and reserve the pepper juice. Peel away the charred outer skin and clean away the seeds inside. Cut pepper into large chunks.
- Combine chopped pepper, pepper juice and all other ingredients in a food processor and blend until smooth.
- Refrigerate until ready to use.
