
Recipe: Italian Buffalo Breakfast Burger
Ideally eaten at breakfast, this mix of classic Italian flavours sit perfectly between a soft burger bun.
Fresh lemon and tomatoes, milky buffalo mozzarella, parmesan fried aubergine slices with a touch of hot sauce and a crispy egg, slathered in caper-basil mayo to finish it off. The best way to start your day.

- 1 burger bun
- Butter at room temperature
- 1 egg
- Oil for frying
- 2 slices tomato
- Squeeze of lemon juice and sea salt
- 1/2 small aubergine, sliced lengthways into 1/2 cm thickness
- 75g mozzarella
- 2 Tbsp grated Parmesan
- 1 Tbsp capers, chopped
- 60ml mayonnaise
- 1 Tbsp chopped basil leaves
Instructions
- Combine mayonnaise, capers and chopped basil leaves.
- Squeeze a little lemon over tomato slices and sprinkle with salt.
- Heat a frying pan with oil. Brush each slice of aubergine with hot sauce and sprinkle with salt. Fry until golden brown on each side. When the first side is ready, turn aubergine slices over and sprinkle each slice with 1 tablespoon of parmesan cheese. Before removing, turn Aubergine over one last time to crispy fry the parmesan cheese. Remove from pan and set aside.
- Fry egg sunny side up until crispy around the edges. Sprinkle with salt.
- Toast insides of brioche bun then brush with butter
- Spread caper-basil-mayo evenly on each inside brioche bun.
- Layer parmesan aubergine, mozzarella, tomatoes and last of all fried egg.
