Mulled Wine Syrup

Mulled wine syrup, a concentrated version of the original recipe, is a convenient way to produce a glass of warm mulled wine in an instant, adding a shot of the syrup to a glass of wine and instantly heating.

Ingredients

Scale
  • 200g light muscavado sugar
  • 375ml red wine
  • 2 cinnamon sticks
  • 4 star anise
  • 6 cardamom pods
  • 8 whole cloves
  • ½ vanilla pod, split lengthwise and scraped or 1/2 teaspoon vanilla bourbon essence
  • 1 medium orange, cut into slices

Instructions

  1. Place cinnamon, star anise, cardamom and cloves in a large saucepan or cast iron pot. Dry roast spices over medium heat for 1 – 2 minutes until fragrant.
  2. Remove from the heat, allow to cool slightly and then add wine, sugar, orange slices, vanilla
  3. Return to the stove and bring to a boil, then reduce heat to a medium boil, letting it bubble away until it turns into a thick syrup.
  4. Remove from the heat, cover with a lid and leave to infuse for 30 minutes to allow the flavours to develop.
  5. Strain the syrup and transfer it to a sterilized air-tight bottle.
