It’s a fluffy, cheesy, creamy, covered-in-butter and absolutely perfect breakfast pancake

Scrambled egg with the addition of flour and water to puff up the contents and produce a slightly more robust, but equally soft and juicy, eggy omelette pancake.

You can use any cheese you like for the filling, however, cheddar and creamy French cheeses tend to produce the most luxurious results. Mixing two or three types of cheese makes for the most exciting tasting pancake, so don’t be afraid to experiment.

Getting the Temperature of your Pan Right

You will need a large non-stick frying pan. The egg pancake batter is added to the pan without butter and oil to start so make sure your non-stick pan is of good quality.

Only add the batter once the pan is very hot so the batter seals together quickly and starts to rise and puff. This will make flipping it easier.

Ingredients

Scale
  • 1 egg
  • 4 tablespoons of plain flour
  • Big pinch of salt
  • 80ml water
  • Butter

Filling

  • A handful of grated Gouda or Cheddar cheese
  • Slices of French Créaxous cheese (or another creamy French cheese)
  • 1 spring onion, finely sliced
  • Sea salt flakes

Instructions

  1. Combine egg, flour, water and salt. Whisk until the dough is smooth.
  2. Heat a large non-stick frying pan without oil or butter. Pour batter in and swirl around until pan is evenly coated.
  3. Cook for a few minutes, then quickly flip the pancake with a spatula.
  4. After 30 seconds, the pancake should puff up and look fluffy. At this point sprinkle with cheese, scallions and salt.
  5. Fold the pancake in half. Add a knob of butter to the pan and once melted, baste the butter over the pancake.
  6. Remove from the pan. Cut into strips and transfer to a plate. Sprinkle with more spring onion slices, salt and pepper.
